As stated above, Minecraft doesn't want villagers to be able to fight at all. However, iron golems are often too slow to actually defend villages properly and leave it up to the player. To take some heat off the players back, I suggest adding the bull runner villager. Rather than fighting off or attacking mobs, the bull runner villager has lots of health and runs around at top speeds to distract raiding party's or zombies. Any mob that is already attacking the village and is near the bull runner will drop what they are doing and attack the bull runner. However, the bull runner is too fast for most mobs, and can even tank a hit or two from a ravager. Bull runners have helmets made of iron, gold, or leather based on their biome that are shaped like normal helmets and don't quite fit on their heads. That also have corresponding shoulder pads, long chest plates, and depending on the armor type, will have a barrel (around the torso), two tiny anvils (one hanging from the front and one hanging from the back), or a gold block (around torso-similar to barrel) on them for extra protection. A bull runner will also run around the player if they attack a villager. Bull runners only spawn right before a raid or siege and don't despawn after wards. They trade low quality mob loot like rotten-flesh or string.
