If The End is intended to be themed around outer space, then it would be more fitting to give the sky a more starry look like the end portal. Floating white lights would also be a nice ambient particle for The End like the Crimson Forest's spores.
Perhaps the devs could keep the old sky texture when the Ender Dragon is alive in the End, and when it is defeated, the sky becomes starry, almost like the dragon clouded the sky with its breath. Alternatively, the center island keeps the old sky at all times, and the outer islands have the starry sky. If the player travels to the outer islands without using the gateways, the sky slowly fades into the respective biome's sky texture.
This suggestion does have one problem though, and that's that the end gateways and the portal home have the same texture and might blend in with the sky. This might or might not be a problem to the developers, but perhaps the portals can be replaced with a new texture to make it differentiable from the sky, or they could keep it, it's their choice.
