The bartering system should be extended to illagers. Tossing or clicking with emeralds would be the equivalent of tossing or clicking piglins with gold. They might become neutral if you approach them holding an emerald, similar to how the piglins do when you wear gold.
If you do barter with them, you get a status effect that doesn't go away until you enter a village, similar to Bad Omen. Village Traitor, or something to that effect. When you enter a village with this status, your popularity goes down a lot, maybe a full 15 points so that even in a new village, the golem will start attacking immediately.
I'd really like to interact with them on a more humanoid level as opposed to flat out enemies. It would add more personality if they were willing to hold off attacking as long as you had wealth they were interested in. It would also make them seem more on the level of villagers instead of just villager-looking enemies.
Balancing your relations with illagers and villagers would be interesting. The illagers would have a chance of giving items cheaper than villagers (example: 1 emerald for leggings, or a Bottle o' Enchanting) at the cost of it being harder to trade with villagers because they'll be angry with you.
Their types could affect what they give in return. Regular pillagers might trade arrows and ingots. For Evokers, books, swords and red wool. Vindicators, armour and weapons. All would have "junk" trades too, like gravel, dark oak, flint, rotten flesh and different flowers.
