Totally agree with the idea of a new item for hoglins to drop. maybe even change the leather to something too just like rabbits hide. The disinfecting mechanic can be tricky but I do enjoy working with the piglins to get the item to be safer.

I definitely think this would make sense for a hoglin to drop. A creature living in the nether dropping porkchops don't seem right lol. Maybe have sowbelly meat sometimes be crispy, or burned, and take a little bit longer to eat to make it even more challenging. The nether should be harder to reside in than the overworld; therefore, not starving in this harsh realm is difficult. This would do the job.

This is a good idea! Hoglins can be very annoying at times and the reward you get for taking care of them is the equivalent of what a cow drops, just porkchops instead of beef. If I want food in the nether, I can take some cows and breed them there for the same amount of food and leather. I don't even have to go back to the overworld for wheat. I can use a block of dirt and turn it into farmland, get bonemeal from skeletons and wither skeletons, and bone meal the seeds a whole bunch until I have enough wheat to breed the cows. A new food item would make them more useful and unique to the nether. Plus isn't it kind of weird how PIGlins eat PORKchops?

I agree with the idea. Perhaps you don't need to wear a full set of gold armor? It would confuse new players as they wouldn't know what to do to get a Piglin to disinfect it. Otherwise very cool idea. Yeah some of the piglin's barters are important and useful but some of them aren't, and this would make piglin bartering more useful. (from what I am seeing you need to barter with the piglin again to refresh it's interest.)

Extra suggestion: Maybe have infected Sowbelly not give poison and hunger, but rather only weakness plus another new effect? This would make eating infected Sowbelly actually worth eating in early game nether only survival. Kinda like rotten flesh, in a way.

The cooked Sowbelly perhaps restores 10 hunger points (5 hunger bars), have more saturation than steak (but still not as much as golden carrots), takes a longer time to eat, and can also be eaten with full hunger.

Oh! What if you bring infected Sowbelly into the overworld for 15 seconds and it becomes decayed Sowbelly? As Hoglins zombify when going to the overworld, this would make a good continuity feature. decayed Sowbelly gives stronger negative effects than infected Sowbelly (Like wither, hunger and other new effects) and not even Piglins can disinfect it. In fact, Hoglins and Piglins are scared by it (like soul fire and warped fungi). Zoglins also drop decayed Sowbelly. (Disinfected and cooked Sowbelly is immune.)

The PMDMCG, your suggestions are amazing and they are perfect contributions! I agree that Infected Sowbelly giving poison and hunger is a bit harsh and it should act more like rotten flesh. Wearing a full set of golden armour would also be confusing for new players. There would be no way to figure that out other than searching it online. The stats for Cooked Sowbelly sound great as well!

The best feature you shared was the Decayed Sowbelly! I really like how one of the best food sources in the game can't be eaten in the overworld. Another reason to stay in the Nether! Decayed Sowbelly could give crazy effects like nausea, poison, weakness, and hunger. It would be a great continuity feature!

Do you mind if I include some of your features for my post? I would be happy to credit you for your ideas, however, I understand if you chose not to as they are your ideas after all.
