Why would you do that though? Diamond gear doesn't naturally generate in most places, so you won't just have a bunch of diamond gear lying around (unless you raid end cities a lot) and you can disenchant the diamond gear in case you get an enchant that you don't like. Diamond gear is also the best gear, so you won't grow out of it and have no use of it, which makes no sense for the fact you would like to break the gear down.

This becomes OP when you begin breaking down the diamond tools and armor that can be bought from villagers. Many multiplayer economies use diamonds as currency, so a diamond's value goes beyond the tools it can make; when these become renewable and even easily farmable, their value is lost.

The reason why would be obvious i think. get a villager who is an armorsmith. turn him into a zombie then cure him so you get sick deals. i currently have 1 that sells me an enchanted diamond boots and pants for 1 emerald each. if you could break down the gear that would make turning emeralds into raw diamonds possible. also the comment above about being OP is kind of off. by the time this becomes possible to do efficiently you have already beaten the nether to the point of having blaze rods to cure villagers. and if you're willing to break down enchanted diamond gear to get diamonds I wouldn't say your at an early stage game when this is OP. however if it where possible i would assume they would ad something like iron and gold nuggets where you would need to do it nine times per piece of gear to get 1 diamond. 9 emeralds per diamond doesn't seem crazy OP. or if you do it without curing a villager that's 144 emeralds per diamond (pre villager curing for my guy is 16 emeralds per boots so 16x9) for early game people with no nether rod access.

If people are wondering why this would be a good idea, think about all of the armor you get from the end. All of the armor that you don't need to wear, enchant, or use for some other reason, is completely useless. If they were to add a new "break-down" method. then you would be able to turn all of that unused armor into diamonds or iron! I think that this would be a really cool add to minecraft and it would definitely get rid of the grind that you would have to do to find diamonds and iron other ways.

TL;DR unwanted armor from the end could be turned into diamonds or iron.

to those whom call it 'op', consider this, the ability to buy everything diamonds make is already a feature, and diamonds in thier current state are already too common, with the ability to find them in so many more ways than just mining, so either mojang can embrace the ease in getting diamonds, or they can completely nerf the ease, and make it harder. (i would personally prefer a nerf, ((maybe in the form of making villager leveling slower)))

In the past this may have been foolish but with 1.20 with the changes for Netherite Smithing templates and armor trims this has a lot of value add now. Getting a template duplicated costs 6 diamonds now. After raiding a few end cities I have an entire barrel of diamond armors and tools I cannot use. I grind stoned off the exp but that is about all I can do with it now.
