I tnink it would be most suited to cold biomes and Taiga biome. Light would keep it at bay and making a potion from a Wither Rose, Rotten Flesh and Milk and drinking the potion would summon it (because of the canniballistic nature of the myth). It would stand taller then any zombie being the size of a iron golem. Killing it has a rare chance of dropping the Wendigo helmet which would make the player not be attacked by zombies. In addition being attacked by the Wendigo not only depletes health but hunger as well. It would be a boss mob.

2 things. 1 the wendigo (in my mind) could most likely spawn at frostlands, now frostlands is kinda plain and theres not alot there. 2d the wendigo will not die from the sun and instead of it being a fake villager it could be a mob that follows other friendly mobs (yes even players) and will unleash roars letting other wendigos they see food they could be 5 or 4 blocks tall and stay in trees and jump really high

Granted media has probably skewed the Wendigo myth, but what about Wendigos protecting forestry? If players leave trees floating in midair (like the loading screen tells you not to do) the Wendigo will become hostile after a specific number of trees are left floating. Essentially the Wendigo prefers balance in nature and not overuse or misuse. Again, not sure how accurate this idea is against the true Wendigo myth.
