With the functionality of the smithing and fletching table being held back for 1.15, I have an idea for a type of functionality that would be useful and fun.
Perhaps if you had a diamond sword and an extra diamond (or any sword and tool material really), you could go to your smithing table, put the diamond and diamond sword in two different slots, and then choose one of the upgrades that would pop up as an icon (similar to the buttons on a loom). You could use the diamond to make a longer blade, which would improve attack distance, but perhaps lower attack speed. You could add a larger hand-guard, which could add a little more defense when the sword is held.
Also, maybe you could use the smithing table to change the shape of the sword. For a couple examples, this could turn a sword's blade into a thinner, sharper katana-type blade, or a bigger, heavier, thick-blade. A thinner blade could do greater damage and have faster attack speed. A larger blade could do more damage than the thinner blade, but be much slower and make you character walk more slowly.
Also, with this idea, you could also allow materials to be mixed. For instance, maybe with a stone sword, you could change the hand-guard to gold for decorative purposes, or maybe the pommel wood.
And with the fletching table, there could be modifying of bows, such as adding another stick and string to make a longbow, which could have a longer load, farther distance, and greater damage. Also, maybe you could change the material and function of arrows, such as making an iron arrow, which could go a shorter distance, but do greater damage and weigh the target down for a while (until the arrow disappears); or a gold arrow, which could be lighter, easier to load, go farther and straighter, but have less damage. Also, maybe you could upgrade arrows with things such as redstone, which could have an effect of making the arrows fly faster through the air, thus hitting it's target faster (this would be particularly useful when the target is far away).
And finally, it would be fun to have different designs to add to weapons (bows in particular) to make use of in teams, décor, or just plain 'this is my special weapon' displays or use. These could be color-related patterns like terracotta or carpet on llamas.
