I understand the appeal behind adding the other types of stone to the game, It does make caves look much nicer. However, I don't see why you can't make stone tools with them.
I'm not saying to make more than one kind of each stone tool, you'd only need allow us to make regular stone tools out of the other stone blocks, just like how every kind of wooden tool can be made from any kind of wooden planks.
Every time I play a singleplayer survival game in Minecraft, I don't spend extra time to make highly decorative buildings or structures in my world, due to having no other players to show off the builds to. As a result, I'm stuck with chests full of andesite, diorite, and granite, which will eventually be thrown into a pool of lava, due to the lack of uses outside of aesthetics.
This does not need to include the polished variants of these stones or any other stone that has some form of a crafting recipe.
It would also be nice to utilize andesite, diorite, & granite in place of cobblestone in other crafting recipes like furnaces, however, that is an afterthought and shouldn't be as much of a priority.
