When you are making your redstone suggestions, please note that Java and Bedrock will not have the exact same the same redstone systems - this would require redoing redstone system completely on one platform or the other. The two systems are functionally different and are going to stay that way. Please be sure to tag your suggestions with (Java) or (Bedrock).

    You could also farm snowier snow automatically.
    It would be great if this feature would be added in 1.20.2 or so.

    Mojang added every use for these under the sun, from armoring villagers to emptying beehives to dressing mobs, so it only makes sense that they add the very simple and rudimentary functionality of filling and emptying cauldrons...

    Droppers should dye water cauldrons when they are facing straight in the cauldron water.

    I was going to make this suggestion but I see others already beat me to it!

    I have a lava farm using dripstone and cauldrons, and I want to be able to automatically 'harvest' the lava by shooting an empty bucket at the cauldrons. I currently use (a lot of) lava buckets as semi-automatic smelting fuel. Having to manually empty the cauldrons breaks the automation chain. 

    Also, I had the idea to use the dripstone lava/water farm as a delayed random redstone update. Since the observer sends out a signal when the cauldron is filled, it currently only works one time when the cauldron fills up. If we could use buckets (via dispensers) to empty the cauldrons, we could have the system reset on its own. 

    Those are only 2 use cases, as there are countless other applications for this feature. I'm really surprised this isn't in the game since dispensers have so many other similar uses.

    This would allow for some really nice automation.
    Being able to fuel my super-smelter with automatically refilling lava-buckets would be amazing.
    It's also in line with a lot of other dispenser + tool usages (and the fact that dispensers CAN already use buckets.

    This, both with buckets and glass bottles filling and emptying cauldrons, would be amazing.

    I'm trying to build a machine to automatically generate and collect lava buckets from a cauldron; for now I'll have to do it manually, but this would be an amazing idea not just for my case, but many others, as you and others pointed out. Yes please!

    I was trying to empty the water bottles from my bartering farms. Made a setup that would work if dispensers interacted with cauldrons, only to find out it didn't work :(

    Also don't forget to let us dispense water bottles into cauldrons!

    Alright, Mojang, I have come to reveal my secret project and lay bare the crown jewel of my Bedrock realm, not because I want to, but because I must do my part to see this feature added.

    Not just simply an automated lava farm, my goal was to design a build that detects rain via the cauldron filling, awakens a bunch of hidden features in the build if the rain continues, and stop / enter a decay state if the rain ceases. The problem, as you might assume, is that there’s no way to automatically empty cauldrons to effectively “observe” the rain cycle or actually trigger the decay state. At present, it’s merely an “on” switch originating at the cauldron with rain.

    With the introduction of the dispenser / cauldron feature, or something similar, this wonderful idea becomes reality, and I promise I won’t just use it make infinite lava. You have my word that I will upload pictures of the build once it’s done if that’s what it takes, if this feature ever comes around.
