Rails are made of wood as well as metal (yes, some rails do not include wood in the recipe, but they still have the appearance of having wood). They are often also placed (or found) on stone, so it can be difficult to pick them up without also tearing up the floor beneath once you upgrade your pickaxe enough. (At least on mobile bedrock. With my efficiency 5 diamond pick, I hold to trigger block breaking and almost as soon as that is triggered the rail is broken and the stone underneath it as well)
Before the update aquatic you could circumvent this by using a water bucket to wash them away, but rails are now water resistant.
The one thing that could be changed to make working with rails easier again would be to add the ability to break them quickly with axes.
