If there is a high mountain that’s about 400 blocks high then at the top there should be a snow monster

Good idea. Yeti should spawn within blocks 360-400 and be a very strong mob (not boss). Also, maybe even Bigfoot/Sasquatch spawning in the valley's down below. His spawn is rare, same as yeti

I love the idea of adding deer and other mobs along with cabin ruins for looting. Maybe add camp items also like tents and fire pits.

Wonderful Idea! ! What about Giant Tree's to couple with the Giant Mountains? What about a mob that protects these Giant Trees from players that try ti cut it down but are otherwise peaceful? > > > https://feedback.minecraft.net/hc/en-us/community/posts/360047959011-Lumbedoer-Inhabitant-and-protector-of-the-Giant-Trees-

    Nice self-promotion purple. ;)

Mountains being changed/improved and goats were announced at minecon, so I think they'll raise the maximum height if they make the mountains bigger.

There should also be a better biome blend system so you don't go from lush jungle on one side of the river to dry desert on the other. I know there is the biome blend option but it doesn't improve the situation that well. Mountain ranges could have a steadily increasing y level until you reach the mountain range biome

I think in addition to (or instead of) these mobs you've suggested, they should add more unique non-real-life mobs into this biome
