Touch sucks. It's the worst control among the 3 control types available in Bedrock Minecraft. There should be more on screen buttons to to improve this. Here is the list of buttons touch control needs. Please read until the last item, which can make shields available with no problem.

While keyboard and controller players can change the perspective with one button, touch players have to search through the option to find the toggle every single time. This is way slower and inefficient. Next to the pause and chat button, there should be a perspective change button as well.
TOGGLEABLE AUTOSPRINT
I cannot remember the last time I "walked" when using keyboard control. If I can't run, I eat. The current double tap sprint on touch is way slower to initiate, and is also very finicky.
IMPROVED SNEAKING: ONE TOUCH TOGGLE AND OUT OF THE DIRECTION PAD
While keyboard users use "sneak bow" to say hi, the current double tap sneak is way slower and inefficient. Also, because sprinting and sneaking both require double tap, potentials are that you can accidentally sneak when you need to run and vice versa. The sneak button being inside the direction pad is a problem as well. The two should be separated, and sneaking should require single tap.

I think the reason why there are not that much on screen buttons is that Mojang didn't want the screen to be cluttered, and I understand. A huge part of Minecraft is about building aesthetic stuff. A cluttery UI would not be great for that, but a simple f1 button that hides all the on screen buttons solves the problem. Bedrock already has the "hide GUI" toggle in the options menu. Bring it out and make it easy to access.
TOGGLEABLE COMBAT MODE W/ AUTOSWING
Many mobile FPS and RPG games adapted Auto combat mode, which allows the character to fire his gun/swing his sword whenever the enemy is within range and aim. Minecraft should also adapt this method with a simple on screen toggle that allows autoswing.
When we use touch, the only few fingers we use are the 2 thumbs, which means, reducing the amount of controlling you have to do at once is important for better combat. With autoswing, you don't have to sacrifice running or aiming when you have to spam tap to deal as much damage as possible.
Speaking of spamming, autoswing may be too op when combined with extremely fast sword swinging. This makes adding weapon cooldown not only available, but needed for balance.
Autoswing mode can also potentially allow shields and offhand functionality. Here are the examples of how it would work depending on the item.
-
Shield: When held on your offhand and you are on combat mode, a shield button appears on the right side of the screen. You can block while holding this button.
-
Torches and other blocks: tapping the screen will allow you to place blocks, since it won't affect sword swinging on combat mode.
-
Eating/block breaking: holding the screen without moving your finger too much allows you to eat. You can also break blocks with it, but it would still prioritize the tool on your mainhand.
-
Projectile Shooting(bow, egg, snowball): This shouldn't be affected by combat mode, since it is already easy to control.
