While the caves and cliffs update did make mining for ores a lot more interesting it could be much more fun with more underground mobs, so here are some ideas.
In mineshafts there could be Zombie / Skeleton Miners they would both wear lanterns around their waists which would light the area surrounding them but would need fuel to keep active.
In Lush Caves you should watch your step to make sure you don't stand on any dangerous plants like poison ivy, thorny vines or even a carnivorous plant.
In deserts you should keep an eye out for thorny jewelled beetles which would deal thorns damage and have some shiny ores on its back.
In Dripstone caves stay cautious of traps set up by some pesky mobs such as some unstable floors that you might fall through and land on some stalagmites or maybe some stalactites might fall on your head.
Near lava lakes you should keep a water bucket on you because some Molten Llamas are ready to rise from the lava and spit some molten saliva at you.
In the deepest parts of the nether there could be a fierce guardian wolf protecting the ancient ores but you might be able to tame him with some honey.
In the water filled caves of the overworld some angler fish could be ready to provide light for you but at the cost of some of your limbs, unless you have some food for them then they'll follow you around and even into an empty bucket.
These mobs would make Minecraft caving adventures much more fun and keep you observant, thanks for reading this suggestion.
