What if updating the Minecraft witches so that they were neutrals mods, trade potions just like a villager profession, they spawn in swamp huts, their profession block is the cauldron (you can't turn a villager to a witch with a cauldron, the only thing it serves is for witches to produce their trade items), and if you attack them, they will turn hostile and won't be able to trade with you anymore, also it would be a nice way to get potions impossible to obtain in survival.
Also, add a new variety of the witch called the 'Illager Witch' (could be another name if the name sounds generic, Willager maybe?) that is just like the default vanilla witch, hostile to the player, doesn't trade, replaces the default witches in raids, spawns at night and also spawns in swamp huts (is a 50/50 of spawning the default or illager witch)
Also, I saw in another thread similar to my idea about potions being unobtainable until you get to the Nether, so instead of only esmeralds, the trade items could require nether related items too, like blaze rods or nether wart, also making that the witch doesn't trade powerful potions like regeneration, strength level 3 items, exemple scenario: You left Nether with some magma cream, but no blaze rods, if you find a witch, you could trade with them 5 esmeralds and 12 magma cream for a fire resistance potion, that way your next adventure to Nether would be safer
