Yes some others suggested limestone but I think I have a cooler idea for how it could be done.
Limestone would be a yellowish-whiteish-grey stone found in a flat layer of separate chunks below the surface, like the cobblestone texture. I don't know if I described that correctly, but think of the layers of terracotta in the badlands biome but its instead chunks of limestone.
Limestone would be found under 'old' biomes such as the old growth taiga, old growth birch forest, or maybe even below the badlands.
It would be relatively easier to mine (easier than stone) and could be turned into bricks, stairs, tiles, slabs, etc. its colour would be whiter and lighter than stone, but slightly more yellow.
not only does this add more options for builders to build with, but it's also a stone that's used in many old buildings. Specifically here in Canada, there's a few old buildings that if I wished to recreate them in Minecraft, I would have to use a texture pack, or use a different colour.
THE COOLER PART I WAS TALKING ABOUT:
Limestone is made (in much simpler terms) when skeletons from sea life being crystalized over millions of years. This could be an opportunity for fossils to spawn in another area. Fossils are already exclusive enough and I'm fairly sure a large portion of the community doesn't even know they exist, and maybe they never will. If they find these, then they'll surely want to learn more! That is why I think this limestone layer would be a perfect addition to Minecraft.
