An Ice Sculpture Biome
Basically a rarer version of ice spikes that pull inspiration from minecraft mobs and elsewhere
You could divide the sculptures into small, medium, large, huge, and giant. Small would be mobs like endermite, chicken, and parrot. Medium would be fox to donkey. Large would be horses to pandas, Huge would be wither, warden, ender dragon, and giant zombie. Giant would be huge versions of any different mobs.
The spawn chances of any of these would depend on size Huge would be 1/100 where Giant would be 1/500 to 1000 depending on the sculpture like say you had a giant chicken sculpture to the ender dragon. The ice blocks used for these starting from outside to inside starting with ice to pack ice to blue ice. Also this could give you an excuse to add a forth ice variant that colder than blue ice. You could make this into a dimension using blue ice [or the forth variant of ice] and powdered snow to light the portal. If this is what you choose to do make any frozen variant mob available and large frozen ocean connecting like rivers around the biome so players can travel quickly with boats and last add either padding with rabbit hide, blaze powder, and magma cream or add frozen resist enchantments to snow villages and frozen resistance potions or buffs that do both frozen resistance and gives you speed 1/2 or strength 1/2. Last you could have a boss like an ice wyvern, kracken, shark, or whale. If any of these they should be able to break the ice into water.
