Potions are underused, mainly due to their cost in terms of inventory space. One way to fix this could be to allow potions to be merged into potions with multiple effects.
Placing potions in cauldrons is already possible in Bedrock Edition, and it's a feature I expect to see in the Java Edition in the future as well, but why not expand it?
You could place different potions inside a cauldron, and placing under the cauldron (with at least two different potions) a hot block (lava, magma or campfire) would start the brewing process (the water would take on a particular texture and would start producing bubble particles).
After this (it could take 30 minutes, or 36000 ticks) the layer of the cauldron would lower, allowing you to collect a single potion, with all the effects of those potions (each effect reduced in duration by 10 seconds for two effects, +5 for an additional effect).
Opposite effects would cancel each other (if of the same level; e.g. Swiftess I and Slowness I) or would downgrade the higher level effect (e.g. Swiftness II and Slowness I results in Swiftness I).
If there are only two potions with opposite effects of equal level in the cauldron, the resulting potion would be a Thick Potion (no effect).
It could also be automatable with dispensers: the potions could be put in, and also collected from a dispenser with empty bottles (similarly to honey bottles).
These multiple potions could then also be made splash, lingering, ecc. (with the classic methods).
