I think that it should be possible to create sand renewably by dropping anvils onto stone repeatedly. Instead of they themselves being damaged, when falling anvils should have a chance to "damage" the block below them (for certain blocks at least). When falling onto stone there would be a chance for it to convert to cobblestone, cobblestone would turn into gravel, and gravel would turn into sand. This makes more sense that what is already in the game. If you were to throw an anvil out of a 10 story building in real life, the anvil would be more or less unscathed while the ground below would be destroyed.
Farms using this anvil mechanic would be really cool and unique. Farms using this mechanic would seem like industrial stone crushing machines rather than boxes that sand magically comes out of.
While this feature would add unique gameplay it would fit into vanilla minecraft extremely well. If someone were to tell me that this is a feature bedrock edition I would easily believe them. It fits with minecraft's style of having mechanics that allow players to do something without explicitly telling them how to do it.
I think that this feature would also be reasonably balanced and it being over or underpowered were to be a concern the efficiency could easily be tuned by changing the chance of the block being damaged based the speed thereby requiring the anvils to be raised higher or lower changing the time taken per sand generated.
