While a feature like this has some uses, such as keeping players or mobs like villagers out of specific doorways. I'm mainly thinking of it's uses as a building tool.
Many advanced or detailed builds make heavy use of trap doors, fence gates, and etc. as static decoration blocks. However these blocks can still be interacted with, whether on accident or on purpose and can kind of make the part of the build they're being used in look a bit awkward if toggled.
I've always been apprehensive about using things like trap doors and fence gates in builds because I don't like the idea of always having to be careful where I click whenever I'm around them or I'll scuff the build a bit. Similarly to using wax on signs in 1.20 to prevent them from being edited, a feature to lock interactable blocks can benefit builders and give people piece of mind when around builds using these techniques.
Locked blocks could also be ignored by mobs and treated as regular blocks. Such as when constructing villages using workbenches or barrels for their unique textures, they can be locked to prevent villagers from picking up on them as usable job stations.
