Truffles are naturally generated mushrooms that can be found in the soil around trees in three biomes: Old growth birch forests, old growth pine Taigas, and dark forests. They generate (rarely) 1-2 blocks deep in dirt, grass, or podzol, but do not change the appearance of the block. They can only be dug up by using a brush on the soil, and drop regular dirt if broken by any other means. Once dug up, they can be broken into several pieces, which may be sold to villagers, put into suspicious stews (with the effect of reducing hostile mob detection ranges to 12/8, and making it so that the warden can't sniff you out), brewed into potions (all mobs within 5/8 blocks are attracted towards you/repulsed away from you (with fermented spider eye)), crafted into recipes that use mushrooms, and fed to pigs, tamed wolves, and sniffers, where they will proceed to locate one within 16 blocks. However, given the chance, they will dig up and eat the truffle themselves, so you have to brush it up before they can.
When a new birch, large spruce, or dark oak tree grows, it has a 1.5% chance of generating a truffle when grown in the corresponding biome.
Adding truffles would give more functionality to animals and biomes that otherwise would generally be underused in Minecraft.
