Creation of composite / long bows, all kinds of winches for crossbows - the functionality of the workbench.
Fletching - involves highly specialized creation and interaction with arrows. For example, creating arrows with different tips, such as armor-piercing arrows, which will not deal much damage, but will penetrate armor; "slashes", which are useless against armor, but will cause extensive damage if it is not; crescent-tipped arrows with increased hitbox but little damage against small targets.

I figured the fletching table would be used to make tipped arrows, since the devs seem to want to phase out NBT related crafting recipes. Alternatively, I could see it being used to make fireworks (though that doesn't really have much to do with archery...).

Ranged weapons could certainly use a good bit of individualization, since they are otherwise single tiered besides tipped arrows and enchantments. I'd just hope that such a feature would come in tandem with smithing templates, that actually modify your gear stat wise instead of just being functionally useless cosmetics, not counting the netherite upgrade.
