The idea here is a little drastic to gameplay but in a way that makes replaying through the game more interesting every world, adding more "experimentation" to enchanting
All enchantments start as "unknown" when you start a world, and you slowly decipher them by enchanting items / using them. Nothing changes about the enchantments themselves however.
For example if you have a Riptide enchanted book you only see its an enchanted book, not what it has stored. The book will still only be allowed on Tridents (that can give you a hint of what book it actually is). Once using the trident and seeing its using riptide, all future Riptide books will properly display their enchantment. Information of what enchantments a player knows will be stored per world. These learned enchantments could tie into the current advancements/ crafting knowledge system(so learning an enchantment would appear as a toast top right).
My idea of how some enchantments will be discovered: (exact numbers are examples)
Damage amplifying enchants are learned by dealing damage using them(hitting a spider 20 times unlocks bane)
Protection enchants are learned by reducing damage using them.
Frost walker is learned by walking near water.
Unbreaking and mending are learned instantly while losing or repairing durability respectively
