Trade surplus seeds with nitwit, since they throw them at the player

In Java edition, "Nitwit and unemployed villagers throw wheat seeds at players under the Hero of the Village effect."

The villagers pity the nitwits and give them a small allowance! They do not spend this allowance wisely. 

It would be a convenient way to dispose of excess seeds. Especially once you have huge farms for generating income, one can produce a tremendous amount of seeds. There are only two options that I know of, throw them away or use them for bone meal at the composter, but it takes a long time and the turn around isn't even worth it, especially if you already have hundreds of bones for bone meal if you needed it anyway. Even 128 seeds / emerald would be satisfying.
