I think huge bamboo would be an excellent addition to biomes in which bamboo is found, as it would give a more realistic look to them. Essentially, it would be a standard tree-like structure, composed of large bamboo blocks, 1x1, with a wider bamboo texture. They'd probably be twice as tall as typical bamboo, but wouldn't grow taller. When they spawn in, they'd appear similar to a 1x1 base sized spruce. The leaves would have a bamboo leaf texture and grow in 1x1x1 and 2x2x1 shapes, randomly, up the sides of the trunk. The logs would be essentially the same as any other wood, but they'd have a color between birch and the current color of bamboo shoots.
It would be pretty great if bamboo shoots over 20 or 50 in-game days old automatically has a chance to become a bamboo tree, so long as it isn't directly touching another bamboo shoot - or if it is touching another, the adjacent shoot can't become a bamboo tree, until the space around it is clear of blocks.
Bamboo trees would add a new texture to building materials, and maybe open up more crafting options for items, while adding a deeper sense of realism and variety to a very basic entity. It could also burn hotter and faster than normal wood variants - smelting ores in 15% less time than regular wood. Burn bamboo would give regular charcoal. The end texture would be similar to normal wood, but have a darker circle in the middle, to show its somewhat hollow. And, maybe it could collect rain or hold water like cauldrons, no lava.
