Minecraft has a lot of blocks, but what if they had more? Why do we need them? Please don't just add lists of things - these will be marked as spam and removed! Also, no furniture, guns, or vertical/"sideways"/"upright"/"standing" slabs (yes, we see you).

Grappling hook and hardened dirt.

You could add a grappling hook that in order to craft you need 3 string, one fishing rod, and 5 iron ingots. For a new block, you could have hardened dirt, which mining would take as long as 3 dirt blocks, Which would encourage people to craft a shovel. Basically, it would be dirt, hardened dirt deepslate then bedrock, instead of the normal dirt, deepslate and bedrock
