When you're online you walk, explore, fight, defend, and more. When you're offline and in your launcher, the game does it for you according to the places you've discovered in the map already. Meaning based on what you've done ingame already, your character will do also but in very mild levels and quantities. Your Offline AI would be able to do everything the mobs (iron gollem, villager, enderman) can do except for the unnatural features such as teleportation; - collect material - collect food - use up minimal food - gain damage - give damage - die ingame - go into the nether (if you've built your own nether portal) - explores at a range of 500 blocks or what mojang thinks is best (minimal loss of personal homes and landmarks from traveling too far) - maintain crops - gain maps - build structures - etc. The best example of this, is GTA when you log back in your character is always somewhere different. But nothing truly changes in your inventory, that would be the difference in minecraft! @hohmlessofficial on instagram to personally speak to me.
