Milk buckets would be spillable, and act similar to placed water. Instead of being able to drink milk buckets, they could only be spilled. You could drink milk bottles to clear effects, like how milk buckets currently work. When placed milk flows onto lava, it would create a cheese block, similarly to how water creates obsidian when flowing onto lava. I don't know how milk would react with water.
The cheese block could age similarly to how copper blocks oxidize. The block would be eaten in one bite while placed, like cake but only one bite. Each age level of cheese would give increasingly more food bars.
Trying to milk a cow with a lava bucket would create a age level 1 cheese block, empty the bucket, and light the cow on fire. Milking a cow with an empty bottle would be possible.
