I think it would be a great thing to have an update focused on making existing content have new interactions and behaviors. Maybe new behaviors could be added to mobs to make environments feel alive, like making frogs more likely to jump onto logs and hang out on them anf reimplementing creatures running from lit creepers. Maybe new random encounters can be added and maybe these encounters only occur on paved grass or deep in various biomes, like new villagers arriving at your build if certain conditions are met (Maybe at a specific door/bed density, so that if a player builds a town it can get populated over time by NPCs). Maybe a generic dye item can be added that allows mixing of different colors or wool dying can be made to work like leather dying.
I think I just want to suggest that a design philosophy about depth of content over quantity of content be adopted.
