I propose to add a biome that resembles the Andean Altiplano, its main characteristics would be its dirt that would function as sand but would be of a darker brown color, as its name says in Spanish "Altiplano" means place that is in height, and that is quite flat, so it would be close to the mountains, in this biome you can find salt flats, thickets and mist can be generated if it is near a coast.
In this biome there would be many interesting things, such as cacti with edible flowers, quinoa, salt that could be used to make a more effective fertilizer than bone powder, from the dirt that is found in almost all the biome mud could be made, from the pajonales (small bushes of the altiplano) you could take out sticks and in these biomes much more copper and gold would be generated than in the others, you could find llamas, rabbits, even flamingos if possible, and these flamingos, when you feed them, they would guide you to another salar, "pukaras" (small fortresses made of adobe in ruins) could be generated in which loot could be found, in addition to generating valleys and oases in which villages or trees exclusive to the biome would be seen.
Although it may seem too similar to the plateau and the desert, I would differentiate it from these for its fauna, flora, appearance and resources that would make it unique. I think that the biome is necessary so that more people feel identified playing minecraft and build their house, their town or their city and enjoy doing it!
