What I mean by this is that caves along with its biomes could be layered into 3 levels of different stones along with difficulty, the deeper you go, the more dangerous it gets along with the biomes you can encounter. The first layer, the shallow layer, is all made of stone that can exclusively host certain cave biomes in this layer, such as the lush caves along with other new cave biomes like, glacier caves, dried caves, salt caves, e.t.c. The second layer, the middle layer could be made of a brand new stone perhaps regular slate or diabase as an example. This layer will also exclusively host cave biomes too such as the dripstone caves along with other new biomes such as crystal caves, frail stone caves, chargestone caves, mushroom caves, e.t.c. The final layer, being the deep layer will of course be made of deepslate and will exclusively host the most dangerous cave biomes to be found, of course the deep dark, along with other new deep cave biomes such as spider caves, volcano caves, monster caves, e.t.c. Since this new cave system is 3 layered could perhaps extend the world down to -128 to give each layer a good 64 blocks worth of depth. Some cave biomes could generate in a bigger range rather than be restricted to a single layer, for example, dripstone caves could generate throughout all the layers, whilst frail stone caves can generate in the middle and deep layer, but not the shallow layer.
