Potions with nether wart make awkward potions, potions with drip leaf makes steep potions, and potions started with chorus fruit develops into elixir potions.

Awkward potions keeping the classic availabilities of temporary and timed player enhancement [ie. Fire resistance, slow falling, and common witch potions]

Steep potions having both positive and negative effects to achieve differing goals of various degrees.
Having the luck potion made with drip leaf and rabbits foot could make recharge timers less for the shield and other timer based items or increase enchantment potentials. And a downside for such luck could be an adverse unlucky effect that immediately effects for twicr the time of the luck potion and does host of bad things for villager trading, item timers, and temporarily losing the ability to sprint with all being negated with milk.

Alternatively, elixir potions would add permanent buffs to the player that degrade with damage taken. Being liquified armor [chorus fruit+ghast tear] that adds armor to armor less players [allowing people to show off their player skin at the start of combat and switch into armor mid combat]
Echo Absorption potions [chorus fruit+echo shard] that solidify and bind blue hearts to the character until broken while adding a charged overlay to the player, temporary golden hearts not adding on unless available slots.

insom-nausea potions [chorus fruit+phantom membrane] increase mob drops, lowering with damage taken while disrupting vision
