I think there should be a new gameplay mechanic called Momentum. Momentum will control how much resistance is needed to bring an object to a full stop. The faster a player runs or a minecart travels, the more force needed to slow it down. That means you can ride a minecart at incredible speed upwards and then have a jump where the minecart flies into the air and slowly loses speed and falls down to the ground. This also applies to mobs, such as players, passive mobs, neutral mobs, and hostile mobs. If you sprint forward, instead of instantly reaching top sprint speed, you will gradually (but quickly) speed up until you are fully running. If there is a cliff nearby, for example, and you try to stop before falling off, instead of instantly stopping, you will gradually (but quickly, depending on the blocks below you) come to a stop. It is also possible to skid off the edge of the cliff, too.
This also applies to elytras, where instead of reaching top speed by using a firework instantly, you will quickly and gradually reach high speeds. If you've managed to reach a high speed while flying, and decide to instantly turn in the other direction, you will still be flying in the way you were going until you use another firework, which still takes time, but quickly reverses your movement to the direction your facing.
