Mud placed in nether turns into dirt.

You can turn dirt into mud with a water bottle. So if it was placed in the nether it would lose its water and turn back into dirt. Like a wet sponge turns into a dry sponge in the nether.

    Mud bricks shouldn't though, since adobe and cob in the real world are made from dried mud.

    It's a good idea but maybe not.
    I think they won't be adding mud blocks

    Perhaps it would be appropriate to become the coarse dirt in this case.
