I think a Reindeer would be particularly fitting for Minecraft as of today. Not only is it an animal living in the taigas and tundras of the northern hemisphere, which would fit as they are in Minecraft cold biomes, it would also provide a counterpart to the camel and horses and their zombified variant, for the cold biomes (whereas the camel and horse are for the warm and temperate biomes).
I'd assume that Reindeers could be found in Taiga and Snowy villages, in stead of horses, and bred and tamed with sweet berries. Perhaps a feature specific to them, as the donkey is made for transport of items, and the camel can jump further away ? Maybe they could if their rider is attacked, help defending with their antlers ?
In addition to this, Reindeers are being bred and ridden by countless cultures of North Asia, Northern Europe & North America (such as the Sami people of Sweden !), whose traditional practices of reindeer herding have been for a long time persecuted, and are still today in a sorry state, as local governments range from tepidly supportive of local cultural practices, to actively hostile. Their native climates and biomes are also threatened by climate change, and thus, on their survival, whole traditions and cultural ways of life depend.
Their addition to Minecraft would not only be great regarding Minecraft's sensibilisation towards the threats of climate change, but also a very beautiful step towards the recognition of this culturally important animal.
