Kind of a similar thing here to what we saw with the sulfur update, I'm sure they're looking into making the new icecaves more natural looking. Atleast I hope so.
As it stands, them using mostly the known iceblock types has alot to hope for.
Personally I would like to see a sort of a melting icetype that isn't collectible as a block, but breaking it will cause it to become a watersource even with a tool that has Silktouch. They could emit a bit of light as well.
Additionally I would like to see sections that are directly connected to the groundlevel to have a bit of subsurface scattering and illumination to larger areas of the caves. So if there's a single iceblock on the surface level that goes into the cave it would illuminate a small section of the cave underneath during the day with let's say light level 7. And incrementally lowers light level the more blocks there are before the surface. Going down to 0 after 4blocks.
Lastly from a gameplay standpoint I would like to see a way to climb some of the tall ice structures to get to where you need to go, in-case of an emmergency and nothing having enough building blocks. This could give a tool like the hoe another purpose as a sort of a makeshit ice axe. The method of climping with this would me rather risky, but here would be the controls:
Jump + right click (hold) against an icewall and your character would stick the hoe to the ice and let you hang there for a bit. The hanging itself would have a short staminameter.
