-Something everyone has been clamoring for is for potions to be stackable at least to 8. Taking up an entire inventory slot for one potion is a lot of opportunity cost that turns the average player away from them and relegates potions to toys rather than something to take seriously.
-Potions should have multiple starter potions. Having them all start from netherwart isolates all effects and balances them all to the same standard, when they could all be separated into different levels of strength, type, and viability. Which leads into
-Potions could have early game viability via a drippot esc beginner brewer. It would have one potion slot and take longer to brew than a brewing stand but it would give access to weaker potions early game. A byproduct is easing players into brewing so when they get the brewing stand later they aren't as intimidated.
-Potion mixing is something that could be interesting. Put three different potions into a cauldron, and their effects mix so you can compact inventory space. However, a drawback is that the effects will be more diluted for each potion you mix in. So 1/2 effectiveness for two pots and 1/3rd for three.
