The gap between Iron and Diamond is one of the most egregious things about Minecraft's progression. Full iron can be obtained within an hour if you go caving, but getting full diamond can take many hours depending on your luck.
Something inbetween Iron and Diamond, possibly several options, would help make this gap not feel so massive, and give some variety to what people use.
Here are some possible things that could be in this stage of progression:
Steel: Alloy of Coal and Iron. Doubled durability of iron, and maybe 0.5 Armor Toughness for the armor. Additionally could replace Iron for some recipes that use a darker texture on the item.
Rose Gold: Alloy of Copper and Gold. As fast as gold with durability of copper. Same Armor value as Copper, but has 2 Armor Toughness. This gives both Gold and Copper some more use, famously underutilized materials.
Bronze: Alloy of Copper and Iron. Slightly better than Iron in all aspects, but nothing special. Could additionally make some decorative blocks.
Silver: Ore mostly found around the Stone to Deepslate boundry, requires Iron to mine. Stats comparable to Iron, but with 1 Armor Toughness and Mining Speed inbetween Iron and Diamond. Additionally would likely have innate bonus damage to undead mobs, as Silver is often considered a weakness to magical beings.
These are just some examples, there are probably many more that exist.
