Add more variety to existing blocks. Here are some options for wood.

Why does only bamboo have a mosaic variant?

Why can't planks be placed vertically? Just give them a directional property, like log blocks have.

Why aren't there wooden fences, walls, or bars? That would really add variety to building. They could come in four versions:
Log and stripped log.
Wood and stripped wood.

We could also add different textures for chests, barrels, bookshelves, stairs, and all other functional blocks, while keeping the existing blocks as a generic "wood-type-neutral" option.
In other words, using a mix of different woods to craft a chest would result in the classic chest, whereas using a specific type of wood would yield a chest matching that specific wood.
