Introducing ships based on existing mechanics, structures and lore:
Ship entity: Can only be generated by placing every block needed in a specific configuration within the chest of a boat, triggering a transformation when you close the chest, from outside of the boat. You'll need stacks of planks, logs for the mast, wool blocks for the sails, fences, trapdoors. Similar in composition to the shipwreck, but not a full battleship. Creating the ship should also require a cartography table and 3 barrels for its main perk: bringing along multiple villagers.
The ship entity would be the job site block for a cartographer and 3 fishermen, except it also takes over their movement when they activate it, like putting them in a boat. They function under the ship's AI until it's destroyed, which would keep them in place during the day and below deck at night. However, a cartographer and at least one fisherman should be required onboard to steer the ship--ships need a crew after all.
After the ship entity is spawned a banner could be used on it to add a flag, like harnessing a happy ghast. Ships can be attached to leads, used to tow boats, and named. A ship's AI should drift from its original position within the water depending on the current phase of the moon: the more full the moon, the wider the range. This is a nod to the tides being driven by the moon's gravity. If a ship is in a thunderstorm, the range should be increased even further. If a ship has a banner the range should be reduced.
