There's already plenty of suggestions about this general idea, but I may as well throw my own in. Stripping a log gives the corresponding bark type (1-2, more with fortune). One can be used to replace the bark on a stripped log to return it to normal (No more replacing logs in builds after accidental right clicks!). These are a weak fuel source, similar to fallen leaves. 4 can be turned into a bark block, a heavily textured wood block. This can be smelted into charcoal. 8 bark can be turned into a hollow log of the corresponding type (These can also be found throughout forests). You can crawl through these, and water could potentially flow through them. Certain plants could also be placed inside such as vines to allow climbing up through vertical ones, and mushrooms which could maybe spread throughout them for easier farms. I saw someone else come up with this suggestion, but it could also be interesting if bark could be turned into paper.
The hitbox for the hollow log could also 100% be reused for other blocks, such as the copper pipe (Which I made suggestion on last year, https://feedback.minecraft.net/hc/en-us/community/posts/37760024025101-Idea-for-New-Copper-Block-The-Copper-Pipe)
In conclusion, bark would be a very welcome addition to the game, alongside hollow logs, for decorative and functional purposes. Also I think it would fit in really well with the current game drop, given its nature theming!
