The only reason we have a black sky with white stars is light pollution. Minecraft has absolutely none, which means you should be able to see planets, galaxies and nebulae all over during the night. Adding clusters of stars, comets, planets of varying colors (and some with rings), nebulae and galaxies in various mixes of color would add a lot to the beauty and atmosphere of the game.
On top of that, the spyglass could either be used as or upgraded to be a telescope, and players could create their own constellations by drawing lines between stars that stick around. By creating a randomly generated night sky, each world or server could have its own global constellations and take place in its own "universe". There is also an opportunity to add easter egg constellations such as creeper faces, mobs, or anything else the developers find cute or fun. Adding the ability for all players to see constellations drawn by others and the ability to name them would also be a fun touch.
