There are many basic features that are in java that are not in bedrock, for example in java you can put every block in your off-hand and also see what item is in it from your hot bar. in bedrock there is no off-hand area in the hot bar and the range of items is very limited. Also the bedrock combat is extremely outdated, in the 1.9 combat update the combat was completely revamped in java but almost a decade later bedrocks combat has unreasonably been left unchanged! there have been many opportunities such as with the nether update or the trial chamber update where combat was a large part of it however it was never changed! also simple things like fixing the mob hit boxes on bedrock to be the same as java so things like getting hit from blocks away from the middle of the mob don't happen! bedrock could be really good but the small differences and bugs can make it heavily un-enjoyable to play sometimes. I do understand the two version are in different coding languages however even I (I'm not a developer or an avid coder) have learnt how to transfer Java script over to C++. Mojang is a multi-billion dollar company so the excuse of a small team doesn't hold up anymore. there isn't much pressure from the community to have a new update all the time. I'm sure everyone would be happy if you took the time to fix these bugs instead of giving us a new rare biome or a couple blocks every few months it would be so much better if these QOL changes were added and the bugs were fixed!
