With Xbox investing more heavily in Minecraft, I think it's the perfect opportunity to introduce features that truly take advantage of Xbox hardware and its ecosystem.
Since Xbox is owned by Microsoft, Microsoft owns Mojang, and Mojang develops Minecraft, it makes sense for the Xbox version to include a few exclusive or "Xbox-first" features. These wouldn't replace features on other platforms, but would reward the Xbox community and showcase Minecraft at its absolute best on Microsoft's own hardware.
Some ideas include:

Native hardware-accelerated Ray Tracing, improved lighting, advanced shaders, higher render distance, and 120 FPS support on Xbox Series X.

The return of Legacy Console Edition mini-games like Battle, Tumble, and Glide with online matchmaking, private lobbies, and cross-play support.

Exclusive Game Pass Ultimate perks, including Halo, Gears of War, Fable, and Forza mash-up packs, cosmetics, and seasonal rewards.

Deep Xbox integration, allowing players to display achievements, favorite worlds, or 3D builds on their Xbox profile and dynamic backgrounds.

Better Quick Resume support for instantly returning to your world.

Official dedicated Xbox servers with improved performance and stability.

A Performance Mode and a Quality Mode, giving players the choice between higher FPS or better visuals.
These additions would celebrate the Xbox platform while giving players more reasons to enjoy Minecraft on Microsoft's own ecosystem.
