Petrified Oak Slabs have been unused for a long time and I have an idea of how they could be integrated properly into the game, alongside a full block palette.
Block Palette
Besides a new unique wood colour, aiming for a darker grey, the Petrified Wood family of blocks would behave a little differently from other wood types, like requiring a pickaxe to mine and being immune to fire. It would lack the ability to craft boats, chests, crafting tables or similar items, but would still feature the blocks all wood types have. The Stripped Petrified Log/Wood would require a Stonecutter to make, as stripping them with an axe would no longer fit. Similarly, the planks, slabs and stairs would also be craftable through the stonecutter (but not exclusively), as well as a Petrified Wood Wall, similar to other stone blocks.
Generation
Petrified Logs, Planks or Fences would randomly replace the regular Oak in Abandoned Mineshafts, mainly in the Deepslate layers, occurring more rarely the higher up you go.
Renewability
As a family of building blocks, it would be ideal if they're not found only in structures, but given their nature as fossils, they would lack leaves or saplings. In real life, Petrified wood occurs when crystal structures form inside buried wood, so in order to make Petrified wood blocks renewable, I would suggest giving another use to the Budding Amethyst block: any wood blocks placed adjacent to it would transform into their petrified counterpart at the same rate amethyst grows.
