Poplar sap can be obtained from poplar logs

Right-click on a poplar log in a specific state using a glass bottle to obtain poplar sap. It can be consumed directly like honey, is not limited by hunger level, and has no additional effects.

It can enrich the fun of the game.

  That's a good idea! Maybe poplar sap can be used to cure some status effects, then you can combine poplar sap, honey, and milk to make a super antidote

  Great idea! Maybe it would be better as a syrup? It adds a little bit of a Minecraft feel, could bring out new status effects, or... new types of food.
