Constantly turning exploits into accepted features doesn't make the game fair. Exploits are a form of cheating and shouldn't be rewarded or treated as normal gameplay.
It's especially unfair to new players, who may have no idea these exploits exist. They end up facing opponents who use them and are effectively forced to learn those same exploits just to remain competitive. To anyone unfamiliar with them, it simply looks like people are getting away with cheating.
Developers also shouldn't base these decisions on feedback from players who rely on these exploits and don't want them fixed. Allowing exploits to remain in the game means Minecraft is no longer being played according to its own intended rules.
A game shouldn't require players to exploit unintended mechanics just to compete on equal footing.
