Renewing sulfur with its spikes is fine for me, but i find it odd that, unlike Dripstone, they just grow out of the blue without any justification.
I propose that Sulfur spikes grow from the ground upwards instead of from the ceiling downwards, and that, instead of needing just a sulfur block, they also need an active noxious gas pool nearby.
This makes perfect sense, since IRL sulfur grows when solidifying the liquid from condensing sulfur-bearing volcanic gases.

Science aside, this would make renewing sulfur feel unique, and not just like a simple Dripstone recolor, which is how it feels now.
I made concept art for it, but i can't add any links to this post so i'll just describe it in words:
- I drew how sulfur is currently renewed, you place a sulfur block (the "source") and a sulfur spike under it, which then grows longer overtime.
- Then i made a comparison with dripstone, which is similar but has water above the "source" (the dripstone block). This represents water making the speleothem grow.
- Finally, i drew potent sulfur under a water source emmiting noxious gas, then a sulfur block next to the water and a sulfur spike growing from it.
The idea is to make it look like the ascending gas grows the spike, just like the dripping water makes dripstone grow.
