1: Black bears: basically polar bears with some changes. They have a unique behavior to path find to rivers in the forest, and kill salmon. Same as polar bears, they attack if you get close to their young, but can be distracted if you feed them salmon or a sweet berry. Also they can spawn "hibernating" in caves. When black bears get close to beehives, the bees come out to attack. If you feed a bear with honey comb, it either leads you to a nearby cave, river, or abandoned camp.
2: a new crop. Either corn or tomatoes. Corn: once planted keeps producing corn every 2 days (never needs replanting). Corn can be cooked in a furnace to make popcorn, or 3 corn can be crafted into cornbread. Tomato: can be used with 3 in wheat and a bowl to make pasta. Also can be thrown as a projectile at your friends or to prank some bodies house (maybe leaves a stain that can only be removed with a brush).
3: New armor trims: abandoned camps in dappled forests have a chance to contain a unique armor trim. It would either look like the poplar door pattern, or maple leaf pattern. Mojang could even make it similar to ancient city trims, with one design being common (25% chance) and one being rare (2-5% chance). This would make the biome rewarding for late game.
4: Turkeys: the cold cow and pig already look good, but the cold chicken is way out of place. Make chickens in the biome spawn with a unique turkey skin (no mechanical changes)
