I think making the crafting/smithing/smelting recipes for certain items depend on difficulty could be interesting. It could spice up the difficulty by adding an interesting challenge rather than just making things deal more damage. Making this data-driven could also make datapacks and community creations more customizable and fun. Some possible examples I could think of:
- Beds now also require feathers on normal; feathers and iron on hard
- Buckets can be made using copper on easy
- Tiered tools (pickaxes, axes, swords, etc.) require string on hard
- Bows require copper on hard
- Arrows require iron nuggets instead of flint on hard
- Saddles now also require rabbit hide on hard
- Books only require paper on easy
- Eyes of Ender also require a template found in pillager structures (mansion and outpost) on hard
