They should add a gamemode that is between peaceful and normal, passive mode.
In this mode, all hostile mobs would spawn as usual, and have the same strength/health as in normal mode.
Except they all work similar to zombified pigmen, they won't attack the player unless the player attacks first.
As someone who is, admittedly, often scared by the mobs, I play peaceful a lot, but I still want access to the mob drops and to possibly beat the game one day so I think this passive mode would fill a gap.
